Answers

Are your ovens available with a gas assistant                                   No, Fogazzo ovens are not available with gas assistant, because in our experience, residential ovens simply do not need it. Almost without exception  the fire is started with a single match and does not burn out for several hours. A gas assist system would simply be redundant.

Are your ovens masonry ovens?
Technically, yes, although they are different than conventional masonry ovens which are built brick by brick. We learned long ago that a well designed pre-cast oven is less expensive to build and more efficient than a conventional masonry oven.

Can I bake breads in your ovens?                                                             Yes, breads greatly benefit from both the flavor and heating qualities of wood. Bread has been baked in wood fired ovens for millennia.

Can I finish my oven keeping the dome shape?                                    Yes, you can use methal lath over the ceramic fiber blanket and then stucco the dome shape. Be sure to use a waterproof finish coat if your installation is outdoors.

Can I install my own oven?                                                                       Our ovens can be DIY (Do-it-Yourself) but they do require at least a basic level of skill in general construction including masonry, concrete, stucco, etc.

Can I use my oven outside in cold weather?                                      Yes, but the oven should be properly finished to avoid water infiltration whether or not  in use.

Can I use your ovens in my restaurant?                                               The Model 850 and Model 1050 are meant to be residential ovens due to their mass and size, with additional mass they could be used commercially.

Can your ovens be installed indoors?                                                   Yes, our ovens can be installed indoors or out. The main difference in either installation is in the type of chimney system that must be used. Check your local building code for requirements.

Do I have to install a chimney on my oven?                                         Yes, a chimney system is both a code requirement and needed for your oven to work properly. We recommend a minimal chimney of 36” for the Model, 855, 955 and 850 and 48” for the Models 1055 and 1050, this is needed for your oven to have sufficient air intake for proper convection.

Do you have ovens in stock?                                                                Yes, ovens are in stock and ready to ship immediately.

How are ovens shipped?                                                                          All our ovens are shipped in palletized crates. (see here)

How long does it take to get the oven ready to cook?                       All wood fired ovens take upwards of 2 hours to reach pizza cooking temperature (750F). Breads, roasts and other foods that cook at lower temperatures can be placed in the oven in as little as 45 minutes time.

How long does it take to install an oven?                                               Our ovens are the simplest to install and can be ready in as little as two work days.

How long does the oven stay hot?                                                           Our ovens take 24 to 72 hours to cool down to room temperature.

How much do your ovens weigh?                                                           The Model 850 weighs 650 lbs and the Model 1050 weighs 1050 lbs.

Is a brick oven better than a pre-cast one?                                      Brick ovens built with individual bricks are not as efficient as pre-cast ovens due to the fact that bricks restrict the curvature angles necessary to achieve maximum efficiency. Additionally, ovens built brick by brick take longer to complete and as a direct result, cost more.

What are your ovens made of?                                                                    Fogazzo castings consist of refractory concrete for the walls and refractory bricks, for ovens floors.

What is the best way to install a wood fired oven?                                Due to their weight, wood fired ovens should be installed on a concrete shelf, over a masonry, brick, or cast in place concrete walls, on a concrete footing.

What is the minimum clearance required between your ovens and combustibles?                                                                                                 By code, any wood burning appliance must be a minimum of 3 inches from any combustible material. Check your local code for specific requirements.
